Ingredients (4 to 6 servings)
- 1 Sheet of Dorset Pastry Puff Pastry (Organic or Premium)
- 400 to 600 grams of assorted berries
- 2 tablespoons of sugar
- 1 tablespoon of cornflour
- 1 egg beaten
Method
- Preheat the oven to 220°C/425°F
- Follow the instructions for preparation of the pastry on the packaging and gently roll out to a rough square
- Place the pastry on a baking tray lined with baking parchment
- In a large bowl combine the cornflour and sugar
- Add the berries and gently stir until all of the fruit is well coated
- Place the fruit in the centre of the pastry leaving 5cm clear on the edges
- Fold the pastry overlapping in a circle
- Brush with the and dust with more sugar if using fruit with a sharp taste
- Bake for 15 to 20 minutes until golden brown. Once out of the oven rest for 30 minutes to cool before slicing
- Serve with ice cream or whipped cream
